Want a yummy, nutritious snack to get you through until the next meal? Then these are it! They’re so quick and easy to make, that the excuse ‘I don’t have time to cook’ just doesn’t cut it – first, because you don’t really have to cook, and, second, it takes only 15 or so minutes to make.
The credit for this recipe goes to the food blog ..it pleases us. I’ve modified it ever so slightly.
Recipe
Makes about 12 balls.
Ingredients
- 3/4 cup hulled tahini (sesame seed paste)
- ½ cup ground lindseeds or LSA mix {this is a mixture of ground Linseed, Sunflower seeds and Almonds, and can be found in the health food isle of supermarkets, and in health food stores}.
- ¼ cup nuts of your choice. I used walnuts. Almonds, hazelnuts and unsalted pistachios would work just as well.
- ¼ cup chopped goji berries or dried, sulphur-free cranberries {or dried fruit of your choice}
- 2–3 tbsp organic, raw honey or maple syrup {vegan}
- 1 tbsp coconut flour (optional). I just find that adding this makes binding the balls easier, as the coconut flour soaks up the oil in the tahini paste.
- ½ cup desiccated coconut
Method
- Chop nuts and dried fruit into small pieces.
- In a medium bowl, add tahini, LSA, nuts, dried fruit, honey/maple syrup/agave and, if using, coconut flour. Mix well until thoroughly combined.
- If the mixture is too soft to roll into balls, add more LSA. If the mixture is too dry, add more tahini. Taste the mixture and adjust any of the ingredients further until it meets the flavour and texture to your liking.
- Roll the mixture into balls of about 1 inch in diameter (about the same size as golf balls).
- On a plate, roll the balls in the desiccated coconut.
- Voila! Easy, peasy and quick vegan power balls. Enjoy!
